Acknowledgement
Thank you to my maternal grandmother, the matriarch of my family, for influencing my passion for
cooking and for demonstrating cooking and feeding others as a love language. We love and miss you. I
want to thank my mother for giving me the space and necessary freedom and resources to experience,
experiment, and hone my love and passion for food and cooking. To my oldest maternal aunt, thank you
for teaching me methods and recipes my mother cannot, and grandma ran out of time to show me. And
to my sister, thank you for sharing with me new tricks and recipes you have learnt over the years.
Thank you all for guiding, feeding, and loving me.
To the Belize Students’ Association of Jamaica (BELSAJ), thank you all
for letting me practice recipes when we get together to hang out and eat. Thank
you, also, for sharing various cooking tips you have learnt from your families.
To my Belizean/Mexican friends that have become family, thank you for
letting me use your kitchen, and thank you for your eagerness every time to try
a dish. To my Belizean and other Jamaican friend who helped me to record videos
and take pictures for this project, thank you. To my new Belizean/Mexican
