Creole Bread
Creole bread, as the name suggests, originated with the Creole ethnic group. The secret to the soft and delicious savoury bread is the coconut milk and oil which it is made with. Its preparation is a lengthy and laborious preparation of love which is proven to be worth it when you bite into that first warm slice of heaven.
Makes – 2
INGREDIENTS:
2 cups all-purpose flour
2 tsp. instant yeast
¼ tsp salt
¾ cup (75 g) margarine or shortening
3/4 cup coconut milk
OR
25 g coconut milk powder
¾ cup water
about ½ tsp coconut oil (optional)
DIRECTIONS:
1. Clean hands and fingernails
thoroughly.
2. Combine the flour, yeast,
salt, margarine, and coconut milk powder. A little bit of coconut oil can be
added for additional coconut flavour.
3. Mixing with one
hand, slowly add water or coconut milk to the dry ingredients until well combined
and not too sticky.
4. On a clean countertop,
knead the dough for a few minutes until smooth.
5. Cover and leave to
raise for 45 minutes to an hour.
6. Knead again then cover
and leave to raise for another 45 minutes.
7. Divide the dough into two and roll into 2 balls.
8. Place in baking
tray and leave to raise for 30 minutes. The longer the dough is left to raise,
the softer and airier the bread will be.
9. Bake at 425 degrees
in a preheated oven for 25 to 30 minutes or until golden brown.
