Refried Beans

Beans have always been a major part of the Belizean diet, stemming back to the days of our original inhabitants, the Maya people. Beans is consumed in a variety of ways countrywide, with most popular being in rice and beans, stew beans and refried beans. My favourite way is refried beans!

 

INGREDIENTS:

1 lb softened red or black beans

2-3 cloves garlic

1 small onion

1 cup cilantro

1 tbsp. coconut oil

Malher Chicken Consome

salt and black pepper to taste

 

DIRECTIONS:

1.      Add beans along with the water left from softening the beans to the blender.

2.     Chop the veggies then add to the blender.


3.     Blend the beans and veggies together to form a smooth puree.

 Heat a frying pan on medium heat and add the coconut oil.

5.     Put the beans puree into the frying pan.

6.     Cook until no longer watery. Stir while cooking to prevent sticking and burning.

Add black pepper and consome, little bit by little, to taste. Be sparing with Consome because it is salty.

8.     Add salt little by little if needed.
