Chicken Burritos
Belizean chicken burritos can be found at any fast-food shop at home. Burritos are nothing short of being inexpensive, filling and delicious. Making chicken burritos every so often has brought me great comfort while being away from home at university. An authentic Belizean burrito uses Dutch cheese, so of course, I had to bring all the way from Belize. And I certainly did not forget my Marie Sharp pepper for that extra kick!
INGREDIENTS:
Flour Tortillas How to Make Flour Tortillas
Refried beans How to Make Refried Beans
Shredded chicken How to Make Shredded Chicken
Dutch cheese, shredded
Toppings:
Pico de gallo
1 large onion, diced
2 medium tomatoes, diced
½ cup lime juice
1 cup cilantro, chopped
salt and black pepper to taste
hot water
½ head of medium cabbage, shredded
1 cup cilantro, chopped
¼ cup vinegar
½ cup water
1 tsp salt
½ tsp black pepper to taste
for the cabbage sauce
1. Combine the cabbage
and cilantro.
2. Add the vinegar,
water, salt and black pepper.
for the pico de gallo
1. If you don’t like
onion too strong, pour hot water on the onion and leave to sit before draining.
2. Then add the tomatoes,
cilantro and lime juice.
3. Add salt and black
pepper to taste.
Burrito assembly
1. Spread refried
beans evenly and thinly on the flour tortilla.
2. Put a line of
shredded chicken down the middle.
Add cabbage sauce and
or pico de Gallo.
